   I've really missed Randalls food porn posts so in honor of him I decided to take some pics during the day as I worked on smoking up 10 pounds of pork spare ribs for dinner.....

Picked up a nice 10 lb. pack of ribs yesterday at Costco and decided to have some pork for dinner courtesy of my new smoker.

This morning I trimmed out the racks "ST. Louis Style", gave them a good rub down with my super secret dry rub and let them rest in the refrigerator for 2 hours for the dry rub spices to "set".

After 2 hours out of the fridge they come and into the smoker they go.

Into the smoke box goes 2 ounces of apple wood, 2 ounces of cherry wood and .6 ounces of hickory (yes, it actually was .6 ounces.. I weighed it). I normally only use apple and cherry for pork but I added the hickory to give it a little stronger smoke taste and a bit of "bark".

At 3 hours I opened the door of the smoker for the first time to check the ribs..... they were almost done.... so I sprayed them liberally with apple cider and closed the door to let em go for another 45 minutes.

After the 45 minute wait took em out of the smoker, double wrapped em in foil and let em rest for a bit.

The wife and I sat and feasted until we couldn't eat anymore. One of the best dinners I've had in a long time

Man o man I love me some home smoked ribs! My last batch was only a few weeks ago but you have convinced me it is time to do some more. Hello Sams, here I come! Can't wait for your pictures.

I simply love my smoker. I am considering being smoked myself before being cremated when it's my time, I love it so much !!!!  Kidding of course, But a little applewood hummmmmmmmmm, a touch of Alder...... Maybe you can take it with you, so to speak *grin* .

Since it's the hunting gate I must ask what's the best smoked critter ever smoked ?

Well tonight my wife smoked some deer back strap with hickory chips and finished cooking it on the BBQ. Man it was good.

Looks very good Jeff!  Great job!  If I lived a little closer I 'd drive up and steal some ribs Smiley  

Do I sense some competition between you and Randall? hehehe  

It's good that you are doing other things besides hunting.  There are so many things I want to do, but until I retire, or work a normal 40hr week instead of 60hr weeks, I can't hardly do anything.
