The first batch of venison jerky I've been working on is ready...... came out yummy.......

This jerky is made from venison that I grind up, mix with seasonings and let marinate for 24 hours, then I load it into a jerky shooter and pump out long strips of uniform thickness . After it's done I then cut the long strips into 10 inch pieces. Comes out great. With this batch I did 1/2 with hickory seasoning and 1/2 with mesquite seasoning.... but the mesquite is my favorite. The rest of the jerky I'm in the process of making is the traditional sliced meat jerky and with that I just slice it up myself. I started out with 25 pounds of beautiful venison and will be giving 1/2 the completed batch to a buddy of mine who loves jerky as much as I do. We have a good setup going..... I provide him with fresh venison when I harvest deer as well as giving him jerky and he supplies me with fresh striped bass and bluefish during the late season run of fish when I've given up the fishing for bowhunting.

Jeff that looks great man. Let's do some horse trading you go ahead and send some now, and I promise if a deer or elk runs in front of my arrow in Aug. I'll send you some then. But being serious that does look good, kinda makes that damn slim jim I just ate seem, well, like a crappy old slim jim.

I've eaten my share of slim jims Dave, I actually like em :) but there's no substitute for the real thing :)

That jerky shooter does a nice job. They look "store cut".
I was looking at meat slicers to go with the dehydrator we have to make jerky. I already have the grinder, think I'll check out the shooter instead.

That looks delicious Jeff! I had oral surgery about 8-9 days so I 'm missing 2 molars in one quadrant waiting for the bone and gum to heal so I can get 1 or 2 implants and begin chewing on that side again.. It will be 3-4 months! So I have not eaten a decent meal in a while! And here you are posting this (hard to chew) jerky.. I though it was a little ironic, hehe :)
I chew on one side now, but the brain or tongue somehow has been programmed to push the food to both sides, so it doesn't work too well for me. Getting used to it more & more though as the days go by, but trying to chew pork (wife made pork chops last night) with healing gums and 3 stiches is not fun, and not without some pain!! :o 8)
Enjoy your jerky! Maybe in a month's time I will have some store made :0

As for having a delicious meal that you won't have any problems at all devouring all I have to say is 2 words.......

Absolutely one of my favorite meals of all time and as you know it'll work with any type of meat you want.... but pork is especially good....

I make a lot of jerky. I manage a grocery store and I have the meat cutter cut me a Top Round Roast on a slicer he cuts it cross grain that way when the jerky is dry it is easy to tear off a piece. I also let the meat sit overnight in my secret sauce 8-9 hours later the jerky is done.

Jeff, that`s some nice looking jerky. Lucky we aren`t able to smell it over the net....but still they`re making me hungry.
