Armadillo meat is very good, a little like.....chicken lol.  I was able to try some on a trip to argentina a couple years back, it was flame grilled and lightly seasoned with salt and pepper.  Clean not too gamey meat.

I killed them both at night without a light. The first one was from about 70' and I hit him in the eye. He just collapsed dead! The second one I hit at night again in the shoulder area. He jumped about 2' in the air took 2 steps and dropped dead. I used diablo hunters on both. I'm going to put a cope on next as soon a I can find an inexpensive 3x9 40 ao, I don't think I have to worry about getting one for an air gun since the disco has NO vibration or kick. I would like to find a new stock ( longer) for the disco at least an inch to help with the eye relief and my hold placement, I tried an old tacedge scope I had around and didn't like the hold feel when I got the eye relief where I needed it. Any suggestion would be appreciated.

At least you`ve seen one of them....dead or alive.  I don`t think there`s a chance of them coming into Canada...too cold....unless they escaped from a zoo or someone snuck one into the country and it escaped.
