I cut down on the yeastcake a LOT by going with a long, cool secondary. I've had some homebrews that have way more sediment than necessary. I keep my gravity high so I get big ABVs (8-12%), and it limits my categories (um, here's an imperial .... fill in the blank). But I believe it helps ward off infection and other issues.

Hey Mike.   Looked at your set-up photos.     Have to admit I have no idea what I'm looking at.   But it looks complicated.   It could just as well be something to keep minnows alive as far as I would know.     Is this set-up  for wine or something other than wine?     Anyway,  enjoy!!!!

Yea I love to brew and your right a brew day is litteraly a brewday with All Grain. Its usualy about an 6-8 hour day for me when I brew.....I am wanting to move up to 10 gallon batches same amount of time twice the beer.... sounds good to me... just waiting to come qcross a good deal on a stainless keg I can cut the top off to make a nice new brew kettle out of...



I dont even secondary anymore... honestly a good long fermentation and keeping it in primary will give the yeast a good chance to clean up after themselves... 6 weeks in primary for my darker beers or ones I am not to worried about clarity... and 8-10 weeks foranything I want to drop really clear...

I've been making 10 gallons with slightly different recipes so I can do everything the same right up to the boil. Then I split 5 & 5 and make different brews via adjuncts, hopping, yeasts and temps. It is all-day for sure... not counting bottling!

I'm looking forward to getting this batch into bottles soon! Probably 3 months still till it'll be conditioned...

I can't believe you guys are talking about home brew......My grandmother passed away almost ten years ago, she stopped making illegal liquor in '87 or '88. I went to Mississippi a few years ago, and this gentleman in his eighties or maybe even nineties walked up to me and this was the conversation.  "Hey young man, you look familiar. You any relation to Jerome?" I replied, "Yes sir that is my father." "So Geneva was your grandma'." I replied, "Yes sir, she was." He then took a quick glance around and moved real close to me and said, "Son, I knowed your granma for many a year, and there aint nobody can out brew her. If you know of any of her homebrew laying around, please help an old man out and get it to me. I would really appreciate it." He then looked at me and told me that I adn my father look exactly like my grandfather, repeated his request and walked away. Every time i hear someone mention homebrew i think about how she would have us in the kitchen on the assembly line, one pressing caps, one filling bottles, and one filling the cases. Man i miss growing up..
