Good topic Sis. Talking about Chicken Enchillada soup...:) I made some two weeks ago. Got the recipe years ago from a friends mother. Great tasting stuff and you won't go back to regular chicken soup again..:)

I think the one that does me right is the "Mexican Combo" at El Paragua.

Pozole, carne adovada, carne asada, an pollo enchilada, frijoles, aroz...   and the best damn margaritas west of the Pecos!!!  You walk in the door in this place and first thing you see is a picture of the owner standing with his arm around Dennis Hopper.  Mom was in the phone company for quite a few years and worked in facilities.  She handled the phone orders for every movie star in 120 miles surrounding Espana.  By coincidence, Mom learned that her neighbor(at an undiscolsed distance) is Steven Segal...  who's picture is also up on the wall at Paragua.

I love the place and am sooooo looking forward to returning to the Land of Enchantment!

Either my Spanish is shot or you'd be one-up on me in any college frat party!!!  

For what it's worth I'm bringing the gas-rammed SuperSport.  I'm fully aware that the elevation change from 1360 feet to 6600 will indeed change POI.  BUT- being that my guns are all zeroed at 40 yards with 8.8 grain Beeman FTS I'm bringing the Gamo Hunters(upper 7 grain weight) might keep the same POI.  Guess we'll have to see, huh!

A very dear friend of mine landed the Maestro position with the Santa Fe Philharmonic some years ago.  You might remember him from Alice Coopers band but more so from the late 80's metal scene.  Guess we'll have to see if he's around.  Forgive my lack of divulging namesake.

I'm off to bed folks!  I'll post pics and letcha know how it went!
