Still addicted to burgers
« on: July 19, 2009, 08:27:26 AM »
I went a whole week without a burger and had to have one.

My new favorite;

Home made buns
Blue cheese crumbles and fajita seasoning mixed with fresh ground chuck.
Spicey guacamole spread with toothpick sliced jalapenos, onions, and tomato.
Burned over natural lump hardwood with hickory chunks for flavor.

Tilt.

Thanks!
I didn't want to take away from the burger heaven so I went with chips and guacamole. Next time I might add a little cilantro in the burger mix and a few drops of habanero.

Come on Gene. These were fresh but trimmed of all the seeds and capsium. It leaves the taste of jalapeno but without the hot kick. Those pickled ones suck. Might as well eat a pickle!

A few drops of quality habanero in a whole batch of burger meat is barely noticable. Just a back 'burn' that goes away pretty fast. Makes you want to take another bite and pop another foamy one.

I'm all for popping another foamy one.

I remember when I was stationed in Conneticut there was a store called "Mo Hotta Mo Betta" and I got a small vial of pure capsasin extract. That stuff was STRONG! a drop or 2 in 3 pounds of ground chuck would be more than a little back burn hehe

I remember I used that stuff on the ship for practical jokes too. Worked out pretty well!
