Now what am I gunna do with that pork loin???
Well I cut me a foot long piece off it and then filleted it till i had me a flat loin... Then i seasoned it up real good with cajun seasonings, placed some malabar spinach in there and some red bells, then i smothered it with some sour cream... I rolled it up and made a bacon weave for it.. Then I took some creole mustard and catalina salad dressing with some chopped shallots and smothered the outside. seasoned it again and its ready for the grill..

That's just plain mean Breaux!!! I just spent all morning doing some late Spring cleaning in heat Tarzan couldn't take just so I would be ready for the rest of the years comps. And you break out the big guns.

 Ed its plated now and lookin good.. I made Artichoke hearts and caramalized strawberry's to finish the dish.. This one was a real bomb, no ground pork involved... My fillet knife made the pork flat...

Sooo... I went with thin chicken with greek seasoning, blue cheese, fresh basil, and prochuito. Then rolled it up and grilled some eggplant, okra, and mator.
