Very Nice Timmy, but how did it taste?!?!?! My grill is similar to yours, but it's a Masters Mark brand I inherited from a co-worker. Also lined the burners with lava rocks,....dumb-@$$ lost the rotisery components though!!! :emoticon: Doesn't look par-boiled,...which personally I think is the worst dang thing that can be done to a piece of meat......makes it too chewy like bubble gum. My philosophy,...cook it low and slow!!!! I'd have smoked it myself, but on the grill, a shallow alum pan with moistened hickory or,...in the case of this critter, maybe a mix of mesquite and oak,...to mild out the strong mesquite flavor, would do it justice. On a whim, a few pieces of apple or pecan might bring out something in the.....whatever. I swear, why won't the moderators of this forum give us a 'recipe gate' ?!?!?!?!!? LOL's Bacon does seem to bring out the best in anything,..wouldn't you agree???? Being brought up on Lexington/Shelby ,..both NC's,... and Shelby's far much better , I love a vinegar based sauce but slightly thicker in texture,...yet nothing like good ole "Maurice's" will do in a pinch!!! As for that cornish hen, try some of those juice/ and or V-8 mini cans,..ala beer can chicken style. I'm salivating as I type this comment,....Lord help me!!!! :) .
