Very Nice Timmy, but how did it taste?!?!?! My grill is similar to yours, but it's a Masters Mark brand I inherited from a co-worker. Also lined the burners with lava rocks,....dumb-@$$ lost the rotisery components though!!!  :emoticon:  Doesn't look par-boiled,...which personally I think is the worst dang thing that can be done to a piece of meat......makes it too chewy like bubble gum. My philosophy,...cook it low and slow!!!! I'd have smoked it myself, but on the grill, a shallow alum pan with moistened hickory or,...in the case of this critter, maybe a mix of mesquite and oak,...to mild out the strong mesquite flavor, would do it justice. On a whim, a few pieces of apple or pecan  might bring out something in the.....whatever. I swear, why won't the moderators of this forum give us a 'recipe gate' ?!?!?!?!!? LOL's Bacon does seem to bring out the best in anything,..wouldn't you agree????  Being brought up on Lexington/Shelby ,..both NC's,... and Shelby's far much better , I love a vinegar based sauce but slightly thicker in texture,...yet nothing like good ole "Maurice's" will do in a pinch!!! As for that cornish hen, try some of those juice/ and or V-8 mini cans,..ala beer can chicken style. I'm salivating as I type this comment,....Lord help me!!!!  :) . I Must say again:: Its the RACOON!! LOL!! The "Lil Bird" is a Dove I shot a LONG time ago??  Been at least an hour or so!!LOL!! (Not in season here now) Gotta tell Ya Folks,, Racoon tastes like prime rib,, PROMISE!!  (I never tried it before tonight) Im VERY impressed!! Just dont think Im ready for Posum yet?? Honestly,, Im not shooting any more of them,, I REFUSE to eat them for a variety of reasons. Racoons however,, just joined my list of Game Animals I will eat Happily!!!!!  Now,, if I can just figure out how to tenderize those Squirrells?? (Been eating them for years) Kinda tough Ya gotta admit??  He He !!  Tim.

mustard is a meat tenderizer.....the acids in the mustard break down the enzynes in the meat and tenderize it.....i use it on venison all the time.....guess we'll have to call you "pogo-possum-coon-treerat-timmy" from now on.  ha!!!

Roger stop it!!! I can't type from laughin so hard 'DISCO POGO POSSUM TIMMY' That's funny as hell. Timmy, as Roger said, mustard is an excellent tenderizer. Lots of people soak them(busheys) in vinegar (that acid thing again!!!) or a solution of vin and water. I use the old-fashionned method. After dressing them out, I soak mine in salt water,...refrigerated) for at least 12 to 24 hours,...or until I get home from work the next day. I pat mine down afterwards with a papertowel and then vaccuum seal them in freezer bags. Some folks freeze them in the bag with the same water. After thawing, I soak them in fresh tap water for about an hourto reduce the saltiness,...rinsing a few times with fresh water, then they're ready to go. Baked, roasted, fried, q'd, or smoked,......Smoking them's my next adventure!!!! I love them stuffed with sausage, spinach, and cheese on a bed of dirty rice...my favorite method,...of course....with a strip of bacon over each slab!!! HeHeHe, tjk

I had squirrel for the first time this year. J seasoned it & I did the rest. I fried it like chicken. It was very good. But I don't know
about  possum tho, those critters are U G L Y and man just think about those teeth. Ya'll can have the possum's.

I still think racoons & squirrel's are cute critters.
I never thought I would be an air gun shooter, a big bore toting, ram shooting, motorcycle riding girl. :) But it\'s all good!!!

Nice "Lamp"?? Wal Mart has a few that will accept 1" mounts,, pretty bright & work good,, course the last 2 I have tried were pretty costly I must admit,, The one in my pics set me back $1,, my newer,, "Better One" was high dollar though,, that Puppy was $3.50!! Funny how good they work though!!  He He !!  Tim.
